Frozen Key Lime Pie

Happy Sunday, everyone! Today is my brother's 17th birthday so I FINALLY have a reason to bake something. I haven't had the chance to bake in a long time so it felt good to be back at it!

Since it's the middle of August and quite warm in NJ, I decided to go with a Frozen Key Lime Pie that I have been making for years. It's a family favorite!


To make the crust, you will need to combine:
2 cups graham cracker crumbs
1/4 cup firmly packed brown sugar
1/2 cup butter, melted

Stir these ingredients together and firmly press the mixture into a spring form pan and bake for approximately 8 minutes in a 350 degree oven.

It should look something like this:


For the filling, beat 1 cup of heavy cream until it is slightly thickened. Gradually add 1/2 cup of sugar until soft peaks form. Add 1 12-oz can of sweetened condense milk and beat until stiff peaks form. Beat in 3/4 cups of fresh squeezed lime juice and 1 tablespoon of lime zest. Then beat in 1 pint of half and half. Once the mixture is completely combined, gently pour it over the cooled crust. Cover and freeze for 4 to 6 hours or until firm.

Here are a few shots of the finished product! I garnished with a few lime slices for some extra cuteness. It's a great summer dessert and one that I will continue to make for years to come!

Healthy French Toast

One thing I've been enjoying making for lunch lately is healthy French toast! I had some time to make some nice lunches and this has been one I've been loving! 
Here's one I made recently with blueberries. I should really call it peanut butter "stuffed" French toast since I like to spread some natural peanut butter in between! I also sprinkled a little cinnamon and powders sugar on top and a little bit of maple syrup. I use Nature's Harvest whole wheat 40 calorie per slice bread. It's one of my current faves!
